The meal starts off with the chef’s signature Gruyere popovers. The polished and contemporary dining room provides a contrast to the primal cuts of steak being served. A 28-day aged NY Strip is a favorite as is the selection of American Wagyu. For those avoiding red meat, Chef Tourondel has a menu of fish and fowl selections, including a hulking and indulgent three-and-a-half pound lobster.
